Sesame speckled Riblets
4 lbs. meaty pork spareribs, sawed in half across bone Boiling water 1/2 cup bottled barbecue sauce 1/3 cup orange marmalade 2 T. sesame seeds, toasted Savory cabbage leaves, optional
Cut meat into 2 rib portions; in kettle, simmer ribs covered in enough boiling water to cover for 30 minutes. Drain. In small pan, stir together barbecue sauce and marmalade; heat and stir just until marmalade melts; put ribs, meaty side up in shallow baking pan. Brush ribs generously with sauce. Bake in 350 oven uncovered for 15 minutes. Brush with remaining sauce; sprinkle with sesame seeds. Return to oven. Bake 10 minutes more. To serve, arrange baked ribs on Savoy cabbage leaves if desired Makes 24 appetizers. Source: My Old Recipes
