This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994.

Warm potato salad Edit

Directions Edit

  1. Season salmon with salt and pepper.
  2. Heat oil in large heavy skillet and sear salmon for 2 minutes on each side.

Dill butter Edit

  1. Bring wine to a boil in a heavy saucepan watching constantly.
  2. Reduce heat to low and add 2 tablespoons butter.
  3. Immediately start whisking and continue to whisk until butter has blended smoothly into liquid.
  4. Add remaining butter in 2 tablespoon pieces whisking constantly after each addition until smooth.
  5. Do not let mixture boil.
  6. Remove from heat and add chopped dill, salt and pepper.
  7. Keep warm and reserve.

Warm potato salad Edit

  1. Boil potatoes in salted water until tender then peel and mash lightly with a fork.
  2. Toss with dill butter, capers and shallots.
  3. Put 1tablespoon butter on each plate then top with salmon and serve with potato salad.
  4. Pour additional butter sauce over salmon.
