Scrambled Spanish Tofu

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add onions and green peppers.
  3. Cook, stirring frequently, until onions are lightly browned, about 15 minutes.
  4. While onions are browning, place tofu in a large bowl and mash with a fork.
  5. Add spices and mix well.
  6. Combine all sauce ingredients in a small saucepan and heat until hot and bubbly.
  7. Add tofu mixture to vegetables in skillet.
  8. Cook, stirring frequently, until heated through.
  9. To serve, divide tofu mixture onto 4 serving plates.
  10. Top with sauce.
