• 1 1/2 cups water
• 3 cups Sugar
• 5 cinnamon sticks
• 1 tbsp. whole cloves
• 1/4 tsp. mace
• 1 tsp. chopped ginger
• 1/4 tsp. nutmeg
• 6 cups green mango slices
• 1 1/2 cups vinegar

Combine all ingredients except mangos and boil for 5 minutes. Add mango slices and cook for 30-45 minutes or until tender and clear. Pack mangos into hot sterilized jars. Add syrup and seal. Process for 10 minutes in boiling water bath.
