  1. Finely chop the garlic, 1 Onion and the ginger root. Mix all the above ingredients together except for the rice, Chicken, 2 onions, butter and boiling water. Set aside.
  2. Heat butter or margarine in a large pan and fry sliced onions until golden brown. Add the Chicken. Fry for 10 minutes stirring frequently so that it does not burn.
  3. To prevent hte meat from sticking to the bottom of the pan add 2 tablespoons of oil. Add the massala paste and fry for 2 to 3 mins.
  4. Lower heat, cover pan tightly and cook very gently utnil all the liquid is dissolved and the rice cooked.
