One of the most delicious soups I've ever tasted, with authentic Russian body and flavor with just a little spark of Italian style. Hearty and easy to make, and thick and savory. Serves 4. Please don't add the beef if you're a vegan. Instead, add a sprinkle of salt and brew with a small star anise. If you either don't want meat , are a vegan or want more Russian spice, add chopped beets to the burgoo of steamy yum.
- 3 slightly large potatoes, peeled and diced in bite-size cubes
- Beef, sliced thinly
- 1 20-ounce can of tomato soup (preferably Sunny Select)
