  1. Cream the butter with the sugar, add the 3 yolks one by one, vanilla, ground walnuts and flour as needed, kneading quickly, to make a soft dough.
  2. Make patties about half an inch thick and 2 inches diameter.
  3. Place on a baking sheet, wash with beaten egg white and sprinkle with walnuts mixed with granulated sugar.
  4. Bake at medium heat.
