Regarding veal, aside from the regular use of onion and a bit of garlic, celery and sausage-seasoning seem to have an affinity for veal. If gently braising veal as pot roast, after the first half hour add a few sticks of celery, chopped in stew-size pieces. With the veal gravy, pasta is a fine companion, with a sprinkle of Parmesan cheese.
