Rio Grande rice Bowl
- 8 oz Ground Beef Round
- 1 Cup Chopped Onion
- 1 Tbs chili powder
- 1 Tsp Each Ground cumin And garlic salt
- 1 Cup Raw white rice
- 15 1/2 oz Can corn, Rinsed
- 15 oz Can tomato Sauce
- 2 3/4 Cups Diced zucchini
Cook Beef, Onion, chili powder, cumin And garlic salt in a Skillet 5 minutes. Until Browned. Stir in rice And 1 1/2 Cups water. Bring to a Boil, Reduce Heat, Cover And Simmer 12 minutes. Until rice is Almost Tender. Stir in corn, tomato Sauce And zucchini. Cover And Simmer 8 minutes. More or Until rice And zucchini Are Tender. Serve With Oven Toasted flour Tortillas. Makes 4 Servings.
