• 2 chicken breasts (diced)
  • 5 oz of minced smoked bacon
  • 1 small minced onion
  • 2 minced spring onions
  • 1 clove of garlic
  • 100 ml of olive oil
  • 200 ml of white wine
  • 1 oz of butter
  • 1/2 lb of rice
  • 9 oz of cream
  • 1 tbsp of minced parsley
  • 1 tbsp of mustard
  • Salt and pepper to taste


Boil the rice in a saucepan with water and salt for 20 minutes. Strain it and set it aside. Fry the onion, spring onion, bacon and garlic in a pan with oil and butter.

Add the chicken and fry it. Season it with salt and pepper. Add the cognac and flambe then add the wine and let it boil down. Add the rice and lastly, dissolve the mustard in the cream and add them to the preparation.

Simmer for another 3 minutes stirring with a wooden spoon. Rectify the seasoning if necessary.
Serve in individual bowls sprinkled with minced parsley.
