Ingredients[]
- 3 cups cooked rice, cooled
- 1 1/2 cups diagonally sliced celery
- 6 hard-cooked eggs, chopped
- 1/2 cup sliced green onions
- 2 tablespoons diced pimento
- 1/2 cup Mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon curry powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 teaspoons lemon juice
- 1 teaspoon prepared mustard
- salad greens (optional)
Directions[]
- Combine rice, celery, onions, eggs and pimento in large bowl.
- Blend Mayonnaise, sour cream, curry powder, salt, pepper, lemon juice and mustard; stir into rice mixture. Chill. Serve on salad greens, if desired.
