RED VELVET CAKE WITH VANILLA CREAM CHEESE FROSTING
1 bottle red food color 2 tsp vanilla 2 1/2 cups flour 1/2 cup cocoa powder 1 tsp baking soda 1/2 tsp salt 1 cup butter, softened 2 cups sugar 4 eggs 1 cup sour cream 1/2 cup milk
Sift flour, cocoa, baking soda and salt, set aside. Beat butter and sugar in bowl until light and fluffy. Beat in eggs. Mix in sour cream, milk, food color and vanilla. Beat in flour mixture until blended. Do not overbeat.
Pour batter into 2 greased and floured 9 inch round cake pans. Bake in preheated 350 degree* oven for 40 min. or until done. Cool 10 min. remove from pans. Fill and frost cake layers with frosting. FROSTING---Beat 8 oz pkg cream cheese, 4 tbs butter and 2 tbs sour cream in bowl until smooth. Mix in 2 tsp vanilla, beat in 1 pound pkg confectioners sugar until light and fluffy. MAKES 16 SERVINGS.*
