  1. Cook bacon in small skillet over low heat until almost crisp; remove from skillet and set aside.
  2. Pour bacon drippings into medium saucepan; cook onion in drippings until golden.
  3. Stir in tomatoes, rice, salt, ground black and red peppers, and 1¾ cups water. Bring to a boil; stir once or twice.
  4. Reduce heat, cover, and simmer 15 to 20 minutes or until rice is tender and liquid is absorbed.
  5. Blend tomato paste in 1 tablespoon water.
  6. Stir tomato paste and reserved bacon into rice.
