Monday-Baked ziti With Sausage/Mixed Vegetables
Tuesday-mozzarella Chicken & Linguini Casserole/CornbreadWednesday-Grilled Ham & Cheese Sandwiches/Broccoli Cheese SoupThursday-Crockpot Meatloaf/Rice
Friday-C.o.r.n.(clean Out The Refrigerator Night)Saturday-Omelettes/Biscuits
Chef Salad
- 6 C. Torn lettuce
- 6 Oz. spinach, Torn Into Pieces
- 8 Oz. Cooked Turkey, Cut Into Strips
- 8 Oz. Cooked Ham, Cut Into Strips
- 6 Oz. Swiss cheese, Cut Into Thin Strips
- 1 C. Broken Melba Cracker Rounds
- 8 cherry tomatoes, Halved
- 8 Pitted Black or green olives, Halved
Hard Boiled eggs, Cut Into Slices
Combine All Ingredients in Large Salad Bowls or Divide Ingredients Among Individual Salad Bowls. Garnish With Hard Boiled egg Slices if Desired.
? Lb. Italian Sausage, Sliced
- 1 Stick butter or margarine
- 1 C. Sliced Mushrooms, About 4 Oz.
- 1 Green bell pepper Sliced
? C. Parmesan cheese ? T. pepper
Cook ziti According to Directions; Drain. in a Saucepan, Brown Sausage. Remove to Paper Towels to Drain. Melt The butter in Skillet And Saute? Mushroom, green pepper And Onion Until Just Tender. Blend flour Into The Vegetable Mixture, Stirring Well Until Blended And bubbly. Gradually Add milk And Cook Over Medium Low Heat, Stirring Constantly, Until Mixture Begins to Boil. Continue to Cook And Stir For 1 Minute. Blend in 1 ? C. of The Cheddar Cheese, Parmesan And pepper, Stirring Until Cheeses Are Melted And Mixture is Smooth.
Stir Hot, Cooked ziti And Sausage Into Vegetable Cheese Sauce. Pour Into Greased 2-3 Qt. Casserole Dish. Top With Remaining ? C. Cheddar Cheese. Bake at 350 For 30 Minutes or Until Hot And bubbly.
mozzarella Chicken And linguine Casserole
- 3 Cloves Crushed garlic
- 1 T. Cooking oil
- 1- 2 Lb. Boneless Chicken
- 1 Lb. linguine
- 16 Oz. tomato Sauce
? C. Hot water
- 4 Oz. Sliced, Drained Mushrooms
- 4 Oz. mozzarella Cheese
Brown garlic in Hot oil. Cook Chicken 3 Minutes on Each Side in oil. Cook linguine; Drain. Mix tomato Sauce, Hot water And Mushrooms in a Bowl. salt And pepper to Taste. Add The Following to Casserole Dish:
- 1/3 Sauce Mixture, Drained linguine, 1/3 Sauce Mixture, Chicken, Sauce Mixture, mozzarella Cheese. Bake at 325 For 20-25 Minutes.
Grilled Ham And Cheese Sandwiches
- 1 T. butter, Softened
- 8 Slices White or Whole Wheat bread
- 1 T. Plus 1 T. Dijon mustard
- 4 Slices Baked Ham
- 4 Slices Fat-Free Swiss cheese
Spread butter on One Side of Each Piece of bread. Spread mustard on Unbuttered Side. Place a Slice of Ham And a Slice of Cheese on mustard-Coated Sides of 4 Slices of bread. Cover With Remaining bread. Place Sandwiches in a Heavy Nonstick Pan Over Medium-High Heat. Cook 2 Minutes Per Side, or Until Lightly Toasted. Serve Hot
Crockpot Meatloaf
- 2 Lb. Ground Chuck
- 1 egg
? C. Chopped bell pepper ? C. Chopped Onion ? T. salt
Mix Together All Ingredients, Except potatoes. Shape Into a Loaf. Place in Crock Pot. Quarter potatoes & Arrange at The Sides of Meat Loaf. Cook on High 4-5 Hours or Low 8-10 Hours.
