  1. Combine rice, sugar and milk in 2-quart saucepan.
  2. Cook over medium heat until thick and creamy (about 12 to 15 minutes), stirring frequently.
  3. Remove from heat; stir in vanilla.
  4. Cool.
  5. Fold in almonds and whipped cream.
  6. Alternate rice pudding and raspberries in parfait glasses or dessert dishes.
  7. Garnish with whipped cream and almonds, if desired.
