Quick Truffles

4 oz. cream cheese 10 oz. sifted powdered sugar 2 oz. ground almonds 8 oz. plain chocolate 1 tablespoon of dark rum or brandy Cocoa powder, chocolate vermicelli, dried coconut, to coat Mini paper cases

Soften the cream cheese with an electric whisk in a bowl. Then gradually add the powdered sugar and ground almonds. Melt the chocolate in a bowl in the microwave or over hot water. Stir in the rum or brandy, and add to the cream cheese mixture. Mix it in quickly and evenly. Roll into small balls and cot in the cocoa, coconut, or vermicelli strands. Put into paper cases and chill well before serving. Serves 20 Source: Unknown
