A Catfish recipe

  1. Heat oil in a dutch oven or large, heavy saucepan over medium heat.
  2. Add celery, onion, bell pepper and garlic and sauté until tender.
  3. Stir in beef broth, tomatoes, bay leaf, salt, thyme, cayenne pepper and oregano.
  4. Bring to boil.
  5. Reduce the heat to medium-low, cover and simmer for 15 minutes.
  6. Add catfish and okra to pan.
  7. Return to a boil.
  8. Cover and simmer for 15 minutes or until flakes easily when tested with a fork.
  9. Remove and discard bay leaf.
  10. Divide rice among serving bowls and spoon gumbo over top.
