Chicken with walnuts. Serves 4 people.

  1. Simmer chicken in water seasoned with salt to taste until tender, about 1 hour.
  2. Remove chicken from cooking water, reserving 1-cup stock.
  3. Cool chicken slightly, then cut into 4 portions.
  4. Melt 2 tablespoons of butter in large skillet.
  5. Add chicken pieces and saute until lightly browned.
  6. Remove chicken pieces and keep warm.
  7. Melt the remaining butter in a saucepan.
  8. Add flour and cook, stirring constantly, until lightly browned.
  9. Add stock and bring to a boil, stirring constantly to avoid lumps.
  10. Add vinegar, garlic, walnuts and salt and pepper to taste.
  11. Stir and cook until warm.
  12. Spoon sauce over chicken pieces.
