1 pound pork tenderloin 1/4 tsp salt 1/8 tsp pepper 1 cup white rice Green Mole Sauce 11 oz can Mexicorn, drained and rinsed

Heat oven to 425 degrees.* Season pork with the salt and pepper. Place pork on a rack in a shallow roasting pan. Roast 30 min. or until done. Bring 2 cups of water to a boil in a saucepan. Stir in rice, reduce heat, cover and simmer 25 min. When rice is done, stir in corn, cover and cook to heat through. SLICE PORK, SERVE WITH MOLE SAUCE AND RICE AND CORN MIXTURE. Makes 4 servings.*
