• 4 cups cooked white or brown rice (cooked in chicken broth), cooled
• 2 cups cooked chicken breast strips
• 1 x 14-ounce can mixed Chinese vegetables, drained
• 1½ cups pineapple tidbits
• 1 cup diagonally sliced celery
• ½ cup sliced green onions
• 3 tablespoons diced pimento
• ½ cup mayonnaise
• 1 clove garlic, minced
• 1 teaspoon minced fresh ginger
• ½ teaspoon ground black pepper
• ½ teaspoon dry mustard
• 2 tablespoons soy sauce
• lettuce leaves
• 1 x 3-ounce can chow mein or rice noodles
• additional soy sauce (optional)

Directions Edit

1. Combine rice, chicken, Chinese vegetables, pineapple, celery, onions and pimento in large bowl.
2. Whisk together mayonnaise, garlic, ginger, pepper, mustard and soy sauce.
3. Stir into rice mixture; toss lightly.
4. Serve on lettuce leaves; garnish with noodles.
5. Serve with additional soy sauce, if desired.
