- 4 Cups Cooked Chicken, Cut Into Cubes
- 1 Head iceberg lettuce, Shredded, About 6 Cups
- 1/2 Cup Chopped green onions, Including Green Tops
- 1 Cup cashew Nuts, Toasted
- 1 Can Crushed pineapple, Drained (8 Oz), Reserve Juice
- 2 T. Chopped parsley
- 1/4 Cup pineapple juice (reserved From Above)
- 2 T. Honey
- 2 T. lemon juice
- 1/4 Cup oil
- 2 T. sesame oil
- 1/4 Cup rice vinegar
- 1 T. Dijon mustard
In a Large Bowl, Toss Together First 6 Ingredients. in a Glass Jar, With a Tight Fitting Lid, Shake Together Dressing Ingredients. Pour Dressing Over Chicken Mixture And Toss to Blend. Place Salad on a Large Platter And Decorate With pineapple Slices Sprinkle With Chopped Cashews. Serves 6Note: 1/2 Cup Yellow Raisins, is a Nice Optional
