Pine Nut and Orange Wild Rice
1 cup golden raisins 1/2 cup water 1 pkg. long grain and wild rice (6 oz) 1/2 cup pine nuts,toasted 2 T. chopped fresh parsley 2 to 4 T. extra virgin olive oil 2 T. grated orange rind 2 T. orange juice 1/4 t. freshly ground pepper Freshly grated Parmesan cheese
Combine raisins and water in a small pan. Bring to a boil; cover, reduce heat and simmer 3 minutes. Remove from heat and let cool. Drain and set aside. Cook rice as pkg. directs. Combine rice, reserved raisins, pine nuts and next 5 ingredients in a medium bowl; stir well. Sprinkle with Parmesan cheese. Serve at once. Makes 6 to 8 servings.
