Pickled Sweet Peppers
2 1/2 lb of peppers 2 c of sugar 2 c of cider vinegar 2 c of water 1/2 tsp of celery seed 1/2 tsp of mustard seed 2 cloves garlic, crushed 1 tsp of salt
Wash and remove seeds. Cut into strips. Cook 3 min in boiling water. Drain. Add to all ingredients boiling. Simmer for 5 min. Pack the peppers in jar, cover with pickling mixture. Seal and process in boiling water bath--pints for 10 min, quarts for 15 min.
