Pepper Jelly

6 cups finely chopped red or green bell peppers 3/4 cup finely chopped onion 1/2 cup finely chopped red or green jalapeno chili peppers 1 cup vinegar, divided 3 cups sugar Red or green food coloring, optional

Combine all ingredients in a large non reactive cooking pot; bring to a boil. Reduce heat and simmer 30 to 40 minutes, stirring frequently. Remove from heat and skim. Add food coloring if desired. Pour into sterilized jars. Adjust lids and process for 10 minutes in a hot water bath. Makes about 8 half pints. Source: Marlboro Country Cookbook
