Pecorino cheeses come in many variations but generally it means fresh, medium aged or matured cheeses made from sheep's milk, or a combination of sheep's and cow's milk. When fresh, these are soft, white, moist, granular textured,with a mildly sour taste.
When aged, darker in color, firmer in texture and saltier and sharp in flavor. Traditionally, Pecorino is produced with a salted rind that is painted black. Served as thin slices with meat, bread, etc., and as garnish on salads, pasta and vegetarian dishes etc.
