  1. Beat the Cookie dough ingredients (except flour) in a bowl until fluffy.
  2. Reduce speed, gradually add flour and beat until blended.
  3. Heat oven to 350°F.
  4. Line a 8 inch square baking pan with foil, letting foil extend above pan.
  5. Put dough, peanuts, and peanut butter in a bowl.
  6. Stir until blended.
  7. Pat 1⅓ cups over bottom of pan.
  8. Spread preserves to within ½ inch of edges.
  9. Top with heaping ½ tsp of remaining dough.
  10. Bake 30 minutes or until top is light golden.
  11. Cool in pan.
  12. Lift by foil ends onto cutting board.
  13. Cut in squares.
