PEANUT BASIL SAUCE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Irwin Estate in Fort Worth, Texas in 1988. 1/2 cup coconut milk 3/4 cup vegetable broth 1/2 cup crunchy peanut butter 3 tablespoons soy sauce 2 tablespoon lime juice 1 garlic glove minced 2 teaspoons sugar 3/4 teaspoon ground coriander 1 cup firmly packed basil leaves shredded and divided Whisk together all ingredients and cook over low heat whisking occasionally 5 minutes.
