A nice vegetarian lasagna!
Ingredients[]
- 1 (8 ounces) package Mushrooms
- 4 ripe plantains
- 6 eggs
- 1 bunch fresh scallions
- 1 medium red pepper
- 1 medium yellow pepper
adobo seasoning, to taste oregano, to taste salt, to taste cumin, to taste
- 1 packet goya sazon
- 1 teaspoon capers
- 2 teaspoons pimento stuffed , chopped
- 1 medium Onion
- 4 cloves garlic
- 1/2 cup tomato paste
Cheddar Cheese, shredded mozzarella Cheese, shredded
Directions[]
- Sautee all vegetables and seasoning.
- Slice plantains; fry plantain slices.
- Mix 3 eggs with Adobo.
- Pour into bottom of lasagna dish.
- Place one layers of plantains in bottom, then Cheese, then veggie mix, then Cheese, then plantains.
- Mix 3 eggs with Adobo.
- Pour on top of the other layers in the lasagna dish.
- Bake at 350 degrees for 25 minutes or until eggs/top is browned.
