  1. Preheat oven to 350 °F.
  2. Separate 7 eggs.
  3. Beat whites until stiff but not dry.
  4. Add two whole eggs to the yolks and start beating.
  5. Gradually add sugar, lemon juice and rind while continuing to beat.
  6. Add potato starch and matzo cake flour.
  7. Carefully but thoroughly fold in beaten whites.
  8. Bake in an ungreased 10-inch tube pan for 40–50 minutes.
  9. Invert pan until cool.
