Original Sea Island Shrimp

Shrimp Mixture: 5 pounds fresh or frozen medium shrimp 4 medium sweet white onions, sliced 4 medium tomatoes, sliced 4 lemons, thinly sliced Marinade: 1 cup oil 1/4 cup vinegar 1 garlic clove, minced 1 t. Worcestershire sauce 2 t. salt 1 t. sugar 1/2 t. black pepper 1/2 t. celery salt

Clean, cook and drain shrimp, In a large salad bowl, alternately layer shrimp, onions, tomatoes and lemons. Mix marinade ingredients and pour over the salad bowl contents. Marinade may be doubled if needed. Chill eight hours so that flavors blend. Decorate with parsley, if desired. Serve with crackers. Recipe Created by Sea Island restaurants in the 1930's.
