ORANGE CREAM PUFFS
- 1 cup flour
- 3/4 tsp baking powder
- pinch of salt
- 1 stick + 1 tbs butter
- 3/4 cup water
- 5 large eggs
- 3 1/2 cups heavy cream
- 1/2 cup confectioners sugar
- 1/4 cup orange zest
- 1/4 cup orange liqueur
Heat oven to 450 degrees.* Whisk flour, baking powder and salt in a bowl. Bring water and butter to a boil in a saucepan. Boil until butter melts. Add flour mixture, stir until mixture comes together. Cook stirring 2 min. Transfer hot dough to a bowl.
Beat eggs into dough until blended. Cut 1/2 inch off 1 corner of a ziptop bag. Spoon warm dough into bag. Pipe 1 1/4 inch wide ball shape mounds on 2 large baking sheets lined with nonstick foil. Bake 10 min. or until beginning to brown. Reduce oven temp to 350 degrees.* Bake 15 min. longer or until golden and baked through. Cool. Cut in half horizontally.
FILLING---Beat cream in a bowl until it starts to thicken. Add sugar beat until peaks form. Beat in zest and liqueur. Cut 1/2 inch off 1 corner of another ziptop bag. Insert a large star decorating tip. Spoon in the cream and pipe 3 tbs on bottom half of each puff, replace tops. Drizzle with caramel sauce, and garnish with orange segments and halved strawberries.
