1/4 cup oil 3/4 cup sugar 4 cups coarsely chopped onions Salt Pepper 1/2 cup red wine vinegar
Heat the oil in a skillet until it starts to smoke. Add the sugar and lightly caramelize. Add the onions, season with salt and pepper and cook for 15 minutes over medium heat, stirring regularly to keep the mixture from sticking. Add the red wine vinegar and gently simmer the mixture for 30 minutes. Remove from heat. Allow to cool. Store in refrigerator. The jam will keep for several weeks under refrigeration.
