This Ol'fashioned potatoe salad is for any time any place. Easy to make easy to eat !

- 9 cups cubed unpeeled round red potato (about 3 lbs.) or another potatoe of your choice
- 1/2 c. diced Onion
- 1/2c. diced celery
- 1/2 c. cup diced radishes
- 1/4 c. sweet or dill pickle relish (optional)
- 3 hard-cooked egg, mashed
- 1/3 c. Mayonnaise (or more to make it creamy)
- 2 TBS. chopped fresh parsley
- 1 tsp. prepared mustard (I use other mustards at times - i.e Dijon)
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp garlic salt

Place potatoes in a large pot, cover with water, and bring to boil. Cook about until tender. Drain & cool; cut into cubes, place in bowl with next 5 ingredients; toss gently. Combine Mayonnaise and next 5 ingredients; stir well. Pour over Potato mixture; toss to coat. Cover and chill.
