  1. Preheat oven to 325°F.
  2. In a large bowl, combine eggs, sugar, salt and nutmeg.
  3. Slowly stir in milk and vanilla.
  4. Pour ½ cup custard into each of six 5-ounce custard cups.
  5. Sprinkle with cinnamon.
  6. Set filled custard cups in a shallow pan.
  7. Pour about 1 inch of hot water in the pan around custard cups.
  8. Bake on center rack of oven 35 minutes, or until a knife inserted comes out clean.
  9. Serve hot, warm or chilled.
