The acidity of the tomatoes helps to cut down the sliminess of the okra.
- 12 boiled okras
- 4 chopped tomatoes
- 4 tbsp bread crumbs
- 1 oz butter
- 1 oz flour
- ½ pint milk
- Melt butter, stir in flour for 2 minutes. Remove from heat and add the milk gradually.
- Season and cook over low heat for 5 minutes. Chop okras, mix with tomatoes and 2 tablespoons of the breadcrumbs.
- Turn into a baking dish and pour flour-milk mixture over this.
- Sprinkle with remaining breadcrumbs and bake for about 15 minutes in a moderate oven.
