Okie Dokie Sliced Baked Potatoes
4 medium potatoes 1 t. salt 2 to 3 T.melted butter 2 to 3 T. chopped fresh herbs, such as parsley, chives, thyme or sage 4 T. grated cheddar cheese 1 1/4 t. Parmesan cheese
Preheat oven to 425. Peel potatoes if the skin is tough, otherwise just scrub and rinse them. Cut the potatoes into thin slices but not all the way through. Use a handle of a spoon instead of a knife to avoid cutting all the way through. Put the potatoes in a baking dish and fan out slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes. Remove from oven and sprinkle with cheeses. Bake for another 10 to 15 minutes until lightly browned, cheese are melted, and potatoes are soft inside.
