  1. Heat oil in large skillet over medium-high until hot.
  2. Sprinkle creole seasoning over pork.
  3. Add pork and onion to skillet.
  4. Cook and stir 5 to 7 minutes or until pork and onions are beginning to brown.
  5. Add broth, simmer 2 to 3 minutes or until liquid is slightly reduced.
  6. Reduce heat to low, stir in sour cream until blended.
  7. Add rice, cook 2 to 3 minutes or until thoroughly heated.
  8. Garnish with parsley.
