  1. Preheat the oven to moderately hot, 200 C (400 F).
  2. Cover with a damp cloth and leave in a warm place for 2 hours.
  3. Knead on a well-floured surface for 2–3 minutes, or until smooth.
  4. Divide into 8 portions and roll each one into a oval 15 cm (6 inches) long.
  5. Brush with water and place, wet-side-down, on greased baking trays.
  6. Brush with melted ghee or butter and bake for 8–10 minutes, or until golden brown. Makes 8.
