Mushroom Onion Quiche
1 deep dish pie crust shell 1 1/2 cups sliced fresh mushrooms 3/4 cup chopped onion 2 T. butter or margarine 1/4 t. salt 1 1/2 cups shredded natural Swiss cheese (6 oz) 4 beaten eggs 3/4 cup whipping cream 3/4 cup milk 1/2 t. salt Dash pepper
Prebake unpricked pie crust on preheated cookie sheet in 450 oven for 6 minutes. Remove pie crust from oven. Reduce oven temperature to 325. Cook mushrooms and onion in butter or margarine until onion is tender, but not brown. Drain; sprinkle with 1/4 t. salt. Sprinkle cheese over bottom of partially baked pastry shell. Spoon mushroom mixture over cheese. Combine eggs, cream, milk, 1/2 t. salt, and dash pepper. Pour into pastry shell. Bake on preheated cookie sheet in 325 oven for 50 minutes or until knife inserted off center comes out clean. let stand 10 minutes before serving. Makes 6 servings. Source:Unknown
