Mushroom Cheese Ball

2 cups shredded cheddar cheese 1 pkg. cream cheese, softened (8 oz) 1 t. prepared horseradish 1 jar sliced mushrooms, drained (2 oz), reserving 1 T. liquid 1/2 cup chopped pecans Assorted crackers

Coarsely chop mushrooms; in small bowl, mix cheese, horseradish, and reserved mushroom liquid. Beat until smooth. Stir in chopped mushrooms. Chill about 2 hours. On saran wrap, shape into ball and roll in chopped pecans. Wrap. Chill until serving. Serve with crackers. Tip: cheese ball can be frozen. Allow to thaw 2 to 3 hours before serving Makes 3 1/2 cups Source: My Old Recipes
