Mushroom-stuffed Baked Potatoes

  1. Wrap potatoes in foil.
  2. Bake at 425°F for 55 minutes or until soft.
  3. Slice off top of each and carefully scoop out potato.
  4. Reserve skins.
  5. Mash potato with 2 tbsp of the butter.
  6. Add onion powder, salt, pepper and enough milk to moisten.
  7. Beat until fluffy.
  8. Melt remaining 1 tbsp butter in small skillet.
  9. Add mushrooms.
  10. Saute about 5 minutes.
  11. Stir mushrooms and nuts into mashed potatoes.
  12. Heap mixture in potato shells.
  13. Arrange on a baking sheet and sprinkle with cheese.
  14. Bake at 400°F for 15 minutes or until golden brown.
