This traditional salad is a delightful side dish or main meal. It is easy to prepare, which makes it all the more delicious.
- 1 grated orange rind
- 3 tablespoons fresh orange juice
- 2 tablespoons lime or lemon juice
- ground pepper
- 3 tablespoons virgin olive oil
- 2 small fennel bulbs
- 1/2 red onion, sliced
- 6 radishes, thinly sliced
- 1 bunch watercress
Quarter the fennel bulbs length wise and slice thinly.
Add half of the dressing before adding the watercress and rocket. Mix well and add the rest of the dressing.
Serve the fennel with salad leaves of your choice.
