Moroccan couscous or couscous with seven kind of vegetables.

Ingredients[]

Method[]

  1. Cut all vegetables in chunks.
  2. In a large saucepan, saute onion until lightly browned. Add vegetable broth and bring to a boil.
  3. Transfer to a large pot and add carrots, turnips, and potato.
  4. Simmer 15 minutes.
  5. Lower heat and add zucchini and pepper. Cook 20 minutes.
  6. Add beans, tomato sauce and spices.
  7. Cook until heated through.

In a separate pot[]

  1. Bring 2½ cups of water to a boil.
  2. Add couscous, cover and take off of heat.
  3. Let stand 5 – 7 minutes,.
  4. Fluff with a fork and serve with vegetables on top.
