  1. Peel and cut carrots into ¼ inch slices.
  2. Bring water to boil and add salt and carrots.
  3. Cook carrots until mildly soft with some firmness.
  4. Drain / Cool.
  5. Mix remaining ingredients with carrots. Toss well.
  6. Refrigerate.
  7. Serve cool or at room temperature
