Montego Bay Rice and Beans
1 can large red kidney beans, rinsed and drained (16 oz) 2 to 2 1/2 cups water 1 can unsweetened coconut milk (16 oz) 2 cups long grain white rice 2 cloves garlic, chopped 1 t. salt 2 scallions, chopped 1/2 t. black pepper 1 sprig fresh thyme 1/2 t. hot pepper sauce, such as Tabasco
In large pan, combine all of the ingredients and bring to a boil. Reduce heat and simmer for 20 to 25 minutes until all liquid is absorbed. Stir well and serve hot. Unless you are making risotto, you should rarely stir rice while it is cooking as you can easily crush the delicate grains and release the starch, which will make the rice gummy and sticky.
