Mock Apple Muffins

• 1 3/4 c. flour
• 1/4 tsp. lime juice
• 1/4 c. Sugar
• 3/4 c. milk
• 21/2 tsp. baking powder
• 1/3 c. cooking oil
• 3/4 tsp. salt
• 1 c. peeled & chopped mirliton
• 1/2 tsp. ground cinnamon
• 21/2 Tbs. Sugar
• 1 well-beaten egg
• 1/2 tsp. ground cinnamon

1. Stir thoroughly first 5 ingredients; make a well in the center.
2. Blend egg, lime juice, milk, oil, and mirliton; add all at once to dry mixture.
3. Stir just until moistened.
4. Fill greased muffin pans 2/3 full. Sprinkle with mixture of 21/2 Tbs. Sugar and 1/2 tsp. cinnamon. Bake at 400 degrees about 20 minutes.
