  1. Combine rice, 3 cups milk, ⅓ cup sugar and salt in large saucepan.
  2. Cook over medium heat 20 to 25 minutes or until thick and creamy, stirring frequently.
  3. Beat egg yolks and remaining ½ cup milk in small bowl.
  4. Stir into rice mixture and cook 3 minutes more.
  5. Remove from heat.
  6. Stir in 1 teaspoon vanilla.
  7. Spread into buttered 9x9-inch baking pan.
  8. Arrange chocolate bars over rice mixture.
  9. Beat egg whites in medium bowl with electric mixer until soft peaks form.
  10. Add remaining ⅓ cup sugar, 1 tablespoon at a time, about 4 minutes or until stiff glossy peaks form.
  11. Fold in coffee and remaining ½ teaspoon vanilla.
  12. Spread over pudding.
  13. Bake at 350°F for 15 minutes or until golden brown.
  14. Serve warm.
