Midsummer Italian Bread Salad

1 loaf Italian bread, cubed 2 cloves garlic, divided 1 cup tomatoes, chopped 1 cup cucumber, chopped 1 cup red onion, chopped 2 cups fresh basil, chopped 2 T. fresh thyme, chopped 1/4 cup olive oil 2 T. balsamic vinegar

Spread bread cubes on a baking sheet. Bake at 300 for 5 to 10 minutes just until dry. Set aside. Peel on clove of garlic; rub garlic around a wooden salad bowl. Combine bread, vegetables and herbs in salad bowl; Mince remaining garlic clove and add. Add enough oil and vinegar to coat lightly; toss and serve. Makes 4 to 6 servings Source: Get Togethers
