Microwave Swiss Steak
1 1/2 pounds boneless round steak, 1/4 inch thick) 3 T. onion soup mix 1 can mushrooms stems and pieces, drained (4 oz) 1 can diced tomatoes (14.5 oz) 2 T. cornstarch 1/4 to 1/2 t. pepper Dash cayenne, optional
Cut steak into serving size pieces; pour with a mallet to tenderize. Place the steak in an ungreased shallow microwave safe dish. Sprinkle with soup mix and mushrooms, Drain tomatoes, reserving liquid. Set tomatoes aside. In a bowl, combine the cornstarch and tomato liquid until smooth. Add pepper, cayenne if desired and tomatoes. Pour over meat. Cover and microwave on high for 6 to 7 minutes or until mixture begins to boil. Microwave, covered at 50% power for 20 minutes. Turn meat and rotate dish. Cover and cook at 50% power 20 to 25 minutes or until meat is tender. Serves 6 Source: Unknown
