Organisms that are microscopic in size, including mold, bacteria and yeast, adn yeasts and ferments present in milk and milk curd. Under suitable conditions the organisms rapidly grow and can reproduce as quickly as every ten minutes. Some microorganisms cause food to spoil or cause it to be diseased, while others are used intentionally to make antibiotics and ferment foods.
